Milk Permeate

 A portion of the milk that crosses or permeates
the UF membrane. Milk permeate contains lactose, minerals and
nonprotein nitrogen (NPN). True protein typically is not present
although some manufacturers include small molecular weight
compounds that contain nitrogen as part of the protein content.
